As the name suggests, these easy peasy cheesy fishcake bites are so simple to make. I used sweet potato, tuna, spring onions, peas and cheddar cheese. But you can make them with any fish and veg which you have to hand, and can use white potato instead of sweet potato of you want.
It really is just a matter of cooking and mashing the potato, mixing in the fish, veg and cheese, and then shaping and baking! They are a great texture for little hands - soft on the inside but firm enough to hold - and they refrigerate and freeze really well. Enjoy
