When I use pastry I often end up with random off-cuts and bits which I don’t use. I hate wasting food, so I always freeze these bits to use in the future. I have found that topping these frozen bits of pastry with random mixes, cooking them in the oven and cutting them into fingers makes an ideal snack or meal for little'uns. Easy to hold, soft to chew and tasty to eat! You really could use any topping (more ideas below). Today I literally dug around my cupboards and came up with the following combination... The ingredients were...
puff pastry
tinned tuna (in spring water, drained)
plain yoghurt
cream cheese
tomato, chopped
sun dried tomatoes, finely chopped
herbs - I had dill
To make...
mix all the ingredients (apart from the pastry) together
spread the mix on the pastry
bake at 180’C for approximately 20minutes (depending on the size) until the pastry is cooked through
leave to cool slightly and cut into fingers
Eat fresh, refrigerate or freeze. Tips... 📌make sure your mix is nice and wet as it will dry out a bit in the oven (cream cheese and yoghurt is ideal for this) 📌place the baking tray in the oven while you are preheating the oven - placing the raw pastry straight on a hot tray will help ensure it cooks through and gets a crispy base Other possible topping flavours ideas... 🍃pesto 🍃pea and mint 🍅 tomato and basil 🐠 salmon 🍓 strawberry anything you fancy really!
