Aubergine & red pepper pasta sauce


I made up a fresh roasted aubergine and red pepper sauce today to go with everyone’s pasta at dinner. It was inspired by @amuseyourbouche who posts loads of delicious recipes! The ingredients are all fresh and natural with no added nasties - just vegetables, nuts, herbs and spices - so it’s perfect for babies. The roasted aubergine and soaked nuts make the sauce really thick and creamy (my husband thought I’d put a load of mascarpone cheese in it to make it so luxurious) and the nuts provide a great source of protein, iron and zinc. An added bonus is that it’s super simple to make and only uses one dish and a blender. All the cooking is done in the oven so there is no need to slave over a hot stove stirring pans for hours either. The ingredients are... 🍆an aubergine (eggplant) 🌶red capsicum peppers, chopped up into chunks 🍅tomatoes 🥜cashew nuts (I always buy the broken cashews for cooking as they are cheaper) 🥄garlic cloves (still in their skin) 🌱fresh herbs (basil would be great) 🥄spices of your choice (I used smoked paprika) To make... ♨️lightly brush the whole aubergine with oil and place in an ovenproof dish or tray

♨️roast the aubergine in the oven at 180’C for 30 mins ♨️soak the cashews in boiling water for 30mins and then drain ♨️after 30 mins turn the aubergine over ♨️add the peppers, tomatoes and garlic cloves (still in their skin) to the dish with the aubergine and drizzle/spray the veg lightly with oil ♨️roast all the veg for a further 30mins ♨️remove from the oven, slice the aubergine in half and leave to cool ♨️scoop the flesh out of the aubergine and add it, along with the roasted veg, the flesh of the roasted garlic, cashew nuts, herbs and spices to the blender (If you have a strong blender you may choose to put the skin of the aubergine in the blender too) ♨️blend until smooth 📌at this stage you could remove a portion for your little one and add any adult extras extras like salt and chilli and blend again Serve fresh, refrigerate or freeze.
