I made sundried tomato & basil courgette pizzas and crispy baked avocado fries for Joshua's lunch today. đThe courgette (zucchini) pizzas are so simple to make, and they're a great way to get your kids to eat veggies. Who doesn't like pizza right?? đThe ingredients and method are virtually exactly the same as the aubergine (eggplant) pizzas I've previously posted. But we still have a massive glut of courgettes from the garden, so this will help use them up. đIngredients... đĽcourgette, sliced in 1cm rounds đ tomato purĂŠe đ sundried tomato purĂŠe đ§cheddar cheese, grated đ§feta cheese, crumbled đdried basil đTo make... â¨ď¸lightly spray or brush the courgette rounds with oil â¨ď¸bake for 10-15 mins, until starting to soften, turning half way â¨ď¸top with tomatoe puree, sundried tomato purĂŠe, cheddar, feta and basil â¨ď¸bake for a further 5-7 minutes until the cheese has melted Enjoy!!! đĽAvocados are a great source of healthy fats and vitamins, plus they taste bloody gorgeous, but they can be a bit of a slippery customer for baby hands to hold. đĽThe outer crumb on these crispy baked avocado fries gives the avo an ideal grip as well as an interesting texture for little mouths to experience. They were totally inspired by a recipe I saw by @feeding_my_mini_girl_gang đĽI literally dug through my cupboards to see what I had which might be suitable to make a crumb. This turned out to be... đa cheese oatcake đsome panko breadcrumbs đsome dried parsley đĽto make... â¨ď¸slice up some avocado â¨ď¸crush up the oatcake â¨ď¸mix in the panko breadcrumbs and dried herbs â¨ď¸press the slices of avocado in the crumb mix â¨ď¸bake on a lightly oiled tray in the oven at approx 180'C for approx 15minutes đĽenjoy!!!
