Mashed potato balls


I’ve often wanted to give Joshua mashed potato but I know from experience that it is not particularly BLW-friendly! (What a mess!!) However, if you serve it in balls which have been baked in the oven it really helps it hold its shape and makes it easier for little hands to hold. All you really need for this recipe is a couple of potatoes and you can add whatever other ingredients you fancy. For these ones I added spinach, sun-dried tomato paste and used two types of cheese. The ingredients I used are ... 🥔white potato, peeled and diced 🧀cheese - cheddar (grated) and cottage cheese 🥗spinach - mine was frozen spinach which I’d defrosted, squeezed dry and chopped up 🍅sun-dried tomato paste To make... ♨️boil the potato until soft, drain well and mash until smooth ♨️mix all other ingredients into the mash until well combined ♨️roll into balls and place on a greased baking tray ♨️bake until starting to turn golden (approx 5-10mins) Serve fresh (although cooled slightly - potato retains its heat for ages), refrigerate or freeze.
