Quinoa balls


I made quinoa balls today - half were tomato, cheddar & thyme, half were tomato, spinach and cream cheese. The recipe is from @healthylittlefoodies.. They are really healthy and tasty. I honestly think I might start making batches for me to take to work as a snack! The ingredients for the tomato, cheddar and thyme balls are... 🌀1/2 cup of quinoa 🌀1/2 cup of tinned chopped tomatoes 🌀1/2 cup of low-salt stock 🌀1/2 onion, finely chopped 🌀1 garlic clove, finely chopped 🌀60g cheddar cheese, grated 🌀1 egg, beaten 🌀fresh thyme, chopped (but any herbs will do - basil especially) For the tomato, spinach and cream cheese balls I used the same ingredients as above but I also added... 🌀chopped spinach (I used frozen chopped spinach which I had defrosted and squeezed dry) 🌀60g of cream cheese 🌀only 15g cheddar cheese (instead of 60g listed above) To make... ♨️sweat off the onion and garlic in a pan with a little oil until soft ♨️add the quinoa, stock and chopped tomatoes ♨️simmer on a low heat with a lid on, stirring regularly ♨️once most of the liquid has been absorbed check the quinoa - if it is still a bit crunchy and undercooked add a little more hot water. Repeat until the quinoa is cooked ♨️leave to cool with the lid on ♨️stir through the herbs, cheese and egg To bake... ♨️shape into balls and place on a baking tray ♨️bake in the oven at 180'C for 35minutes

Eat warm, fresh from the oven or refrigerate to eat later.

❄️they freeze well too, just leave in the fridge to defrost. Freezing may dry them out slightly, so you could serve topped with a dip or spread.
