Savoury flapjacks


Flapjacks (also known as oat bars, cereal bars and muesli bars) are a great way to serve up oats, seeds and other yummy fillings as they're the perfect size and texture for little hands. Unfortunately they are also usually jam packed with sugar, reducing their baby-friendly credentials. Savoury flapjacks are the answer! These ones are made with carrot, parsnip and sweet potato and are topped with sesame seeds. The ingredients are... 🔅150g rolled porridge oats (not instant or jumbo) 🔸50g unsalted butter, melted 🧀175g cheese, grated 🥚1 egg, beaten 🥕🍠175g of veg, peeled and grated (I used carrot, parsnip & sweet potato) 🥄1 teaspoon mixed herbs 🥄sprinkling of seeds (optional) To make... 🌀mix all ingredients together (apart from the seeds) 🌀press the mix into a greased or silicone tin, pushing it well into the edges and corners and ensuring that the mix is level. 🌀sprinkle over the seeds, pressing them in slightly To bake... 🔥bake at 180'C for 25 minutes Allow to cool and slice into squares or fingers. Eat fresh or store in the fridge.

❄️They also freeze really well. If taking them from the fridge, or once they’ve defrosted, I often put them in the microwave for 15 seconds or so on defrost mode to ‘freshen them up’ a bit. Enjoy x
