I made sweet potato muffins during Joshua’s nap this morning. Packed full of vitamin C and high in protein they’re brilliant as a healthy snack or part of a meal. The ingredients are... 🍠300g sweet potato, peeled and grated 🥗2 spring onions, chopped 🍳3 eggs, beaten 🥄1.5 tablespoons of cottage cheese 🌾125g self raising flour 🧀25g cheddar cheese, grated,
🧀plus little bit extra cheese for sprinkling over at the end
🥄1/2 tablespoon of seeds (I used sesame) To make...
mix everything in a bowl apart from the seeds
spoon the mix into a silicone muffin tray, or greased paper cases in a metal muffin tray
sprinkle over the seeds and a little extra cheese
To bake... ♨️bake at 180’C for approx. 40-45 minutes or until set and golden You could add extra flavours with herbs, spices and chilli. You could also replace some of the sweet potato with other veggies like grated carrot, parsnip, butternut squash or courgette (though you would need to keep an eye on cooking times as other veg may cook more quickly or have a different moisture content) This recipe makes approximately 8 muffins and is adapted from one in Jamie Oliver’s Everyday Superfood book.
