I made lentil, sweetcorn and carrot bites from the babyled weaning cookbook app by @the_baby_led_life for dinner. I didn't have any red lentils so I used chana dal instead. Chana dal is a variety of chickpea rather than a lentil and it has a drier texture so I added an egg to the mix to provide some extra moisture and bind everything together. They came out really well and Joshua absolutely loved them. I served them sliced, spread with red pepper humous alongside some sliced tomato, broccoli and baby sweetcorn.
The ingredients were...
2 slices of bread, whizzed into breadcrumbs
1 cup of chana dal, soaked overnight
2 carrots, grated
1 egg, beaten
50g sweetcorn
50 cheddar, grated
1 teaspoon dried mixed herbs
1/2 teaspoon dried coriander
To make...
drain the lentils
blitz the lentils and carrot in a blender
mix all ingredients together in a bowl
shape the mix into balls and place on an oiled tray
bake at 200'C for 15 minutes, then turn over and bake for a further 10 minutes
