We both had sweetcorn, carrot and spring onion fritters with salad for lunch.
You could add any vegetables you want and could also add herbs and cheese if you fancy it (feta cheese would be particularly nice). If you're adding any vegetables with a high moisture content (e.g. carrots or courgettes) make sure you squeeze out any excess liquid first.

approx. half a tin of sweetcorn, drained,
3/4 of a carrot which had been finely grated and squeezed to get the liquid out

pan fry until beginning to brown and cooked through
Serve fresh, refrigerate or freeze.
They taste best slightly warmed, so if taking from the fridge or freezer then warm through in a dry pan or cook on defrost in the microwave briefly before serving. The fritter recipe was adapted from one in the Gill Rapley and Tracey Murkett BLW Quick and Easy cookbook.
