Aubergine pizzas


I made aubergine (eggplant) pizzas for lunch... then forgot to take them out with us, so served them for dinner instead. Basic ingredients are an aubergine, chopped tomatoes and/or tomato purée, cheese, oregano and any toppings you fancy (I added fresh tomato and sliced olives). To make, slice the aubergine into 1cm thick discs. Brush both sides of each disc with olive oil then bake in a hot oven or dry fry in a pan until soft and slightly browned. Top each disc with chopped tomatoes and / or tomato purée, oregano, any additional toppings and grated cheese. Place under a grill until the cheese has melted. Serve. Joshua had his aubergine pizzas served with sweet potato wedges and sliced peaches.
