Frozen mash cubes


Dinner was courgetti with chopped fresh tomato, a spinach, mint and cream cheese puff pastry pinwheel from the freezer (warmed through and freshened up again in the oven) and cheesy mashed potato bites.

I had previously frozen mashed potato into ice cube trays and stored in a ziplock bag in the freezer. I took a few cubes out, baked them in the oven until warmed through and starting to develop a thin outer crust, then I sprinkled on some grated cheese and popped back in the oven again for a few more minutes to melt. I sliced them in half and left to cool before serving. A simple, mess-free way to serve mashed potato (well, maybe not totally mess free....)

This was followed by a chopped prunes in Greek yoghurt (definitely not mess-free!!)
