Tortilla wrap pinwheels


Joshua had humous, carrot and coriander pinwheel tortilla wraps for lunch today.

I grated the carrot with a fine grater (to help it bind the mix more easily), chopped up some fresh coriander and mixed in some plain humous. To lighten up the mix a bit and reduce the saltiness I also added a spoonful on plain yoghurt. I sliced the edges off a tortilla wrap (and saved the cut offs for nibbling on later), spread the mix on the wrap and rolled it up. You could cut into slices and serve straight away, or wrap up in cling film and chill until needed (this helps it hold its shape better too, making it easier to slice up).

Joshua had it served with tomatoes (which he loves) and cucumbers (which he is not really a fan of). Half the wrap is left over for lunch tomorrow too.
