Tuna and sweet potato fish cakes for dinner, served with broccoli and baby sweetcorn and mandarin segments. To make mix mashed sweet potato, tuna flakes, chopped coriander, a little plain flour and some ground pepper together. (I also planned to add an egg to the mix but we didn't have any so I used ground flax seed and chia seeds in a little water as a binder instead. But to be honest I'm not sure either this, or an egg, is required. I think it will bake fine without). Shape into little patties and bake in the oven until starting to brown and crisp on the outside, turning half way.
