Egg & banana pancakes


There really was only one options for breakfast on pancake day - our super simple, super quick, super healthy two ingredients pancakes. These are a firm favourite in our household which we have regularly for breakfast.

These are more like drop scones / scotch pancakes in size than normal British (or American?) pancakes as they're only a few inches across.

The basic ingredients are one ripe banana and two eggs.

To make, simply mash the banana and stir through the beaten eggs. (The batter will be quite loose and liquid in texture). Heat a little oil in a pan (I usually use coconut oil) and drop in spoonfuls of the mix - approximately two - three tablespoons of mix per pancake.

Wait a minute or so for their base to brown and firm up a little before carefully turning them over with a spatula (they have a more fragile texture than normal pancakes).

You can add any extra ingredients you fancy for added texture, flavour or nutrients...

- ground almond (almond meal)

- desiccated coconut

- flour

- ground flax seeds

- chia seeds

- chocolate drops

- cocoa powder

- berries or chopped fruit

- nuts or seeds

- cinnamon, nutmeg, vanilla etc

Serve fresh from the pan (cooled slightly for little ones), refrigerate or freeze.
