Pancake day!!


I’ve always preferred savoury pancakes to sweet (maybe because you can smother them in cheese) so I wanted to serve some up for Joshua on pancake day.

I made the pancakes using a really simple recipe from Jamie Oliver. Then I filled them with a spinach and ricotta mix (made from frozen spinach which I had defrosted, squeezed dry, chopped up and mixed with ricotta and fresh herbs). Then I cut them into pinwheels inspired by @foodie_mama_ .

They were served with a Mexican lentil bake (recipe already available) and raspberries.

After egg and banana pancakes for breakfast and spinach and ricotta pancakes for lunch, what else could we serve up for dinner than more pancakes!?

For his main Joshua had butternut squash and mushroom gratin. For dessert I served up one pancake spread with homemade strawberry chia jam (recipe available) and one topped with the absolute classic (and what I personally think is the best sweet pancake topping there is)... sugar and lemon! I gave Joshua a fork and spoon to eat with and he managed to successfully spear the food with the fork by himself a couple of times for the first time!! He also had a good attempt at scooping up the gratin with both the fork and the spoon! He definitely understands what he needs to do... now it’s just a matter of practice!
