To make... - Bake the sweet potato in an oven (or microwave) - Spoon the flesh into a bowl and mash - Add the flour and corn flour - Mix well - Spoon chunks of the mix onto a floured surface - Carefully roll into sausage shapes in the flour - Drop into boiling, slightly oiled, water for a couple of minutes until they rise to the surface - Serve with a sauce of your choice If you plan to add sauce at a later stage, drizzle the gnocchi with oil to stop them sticking together. The gnocchi has quite a soft delicate texture to begin with and I initially thought it would turn into mush when I mixed it with the pesto sauce, but as it cools it starts to hold its shape well. The final texture is perfect for little ones - firm enough to hold but soft enough to chew easily (with or without teeth).

I served it with a homemade pesto which I had made by blitzing up fresh basil, flaked almonds, oil, fresh tomatoes and blanched kale.
