Chickpea burgers

Jamie Oliver recently shared these vegan chickpea burgers on his account and I fancied giving them a go. His recipe just has chickpeas and sweetcorn as its main ingredients but for extra variety and nutrients I added some extra veggies as well.
This mix makes about 12 small burgers or 4 large full-size burgers. They're super simple to make as most of the chopping and blending is done in a food processor.
The burgers have a nice mild spicy flavour and, while they develop a firm coating from being cooked, they remain soft in the middle, so they would be great for babies who are new to BLW. I served up 3, along with some veg, for Joshua’s dinner and froze the rest. The ingredients i used were...
- 1x 400g tin of chickpeas, drained (240g dry weight) 
- 285g vegetables (I used drained sweetcorn, 2 spring onions chopped and half a carrot finely grated and squeezed dry) 
- zest of one lemon 
- 3 heaped tablespoons of plain flour (plus extra for dusting) 
- 1/2 teaspoon paprika 
- 1/2 teaspoon ground cumin 
- 1/2 teaspoon ground coriander

- blitz everything in a food processor until just combined (not too smooth, you want to retain some texture) 
- shape into small burger/patty shapes and coat in flour 
- leave in the fridge for 30mins or longer to firm up 
- cook in a frying pan with a slash of oil until golden and cooked through, turning halfway 
Serve fresh, refrigerate or freeze. Enjoy x
