I got a new @lakeland silicone mini muffin tray for my birthday and wanted to try it out, so I made some pancake bites from the Babyled weaning cookbook app. I topped them with blueberries, tinned cherries and desiccated coconut as that’s what I had to hand, but other fruits or berries like strawberries or raspberries would be great too, or you could add a savoury topping instead. The original recipe includes sugar, but I didn’t add any to mine. Joshua loved them as they were, but on reflection I think I little extra sweetness would have worked quite well as, as it stands, they’re a savoury pancake with a fruity topping. The ingredients were... 🌀1+1/2 cups of plain flour 🌀3+1/2 teaspoons of baking powder 🌀1+1/4 cups of milk 🌀28g of butter, melted 🌀1 egg 🌀Optional - 1 tablespoon of sugar or alternative sweetener To make... 🥄Sift the flour and baking powder (and sugar if using) into a large bowl and stir to combine 🥄Whisk the milk, butter and eggs together in a separate bowl (see note below) 🥄Gradually pour the wet mix into the dry, whisking as you go, to make a smooth batter 🥄Pour into mini muffin holes until each is 3/4 full (this bit can be a bit fiddly) 🥄Top with ingredients of your choice (fruit, berries, chocolate chips, cheese etc) ♨️Bake at 180’C for 15-20 mins until just turning golden
Serve up fresh, refrigerate or freeze. They are definitely best warm though, so I'd highly recommend warming through before serving.
(Note: when I mixed the melted butter into the milk it solidified and turned hard and lumpy, so I had to slowly warm the milk/butter/egg mix enough to melt the butter but not enough to cook the egg. This happened because the milk was cold straight from the fridge. To stop this happening you may want to take the milk out of the fridge in advance or warm it slightly before adding the butter (but don’t warm it too much or it will cook the egg)) Enjoy x Get the Baby Led Weaning Cookbook app for loads more fab recipes.
