ABCD muffins


I had some apple purée / sauce in the fridge from a previous recipe and there were some dates lying around, so I made these ABCD muffins containing apple purée, blueberries, coconut and dates. The recipe is based on one from babble.com with a few changes to make it a bit more baby-friendly including using date paste instead of sugar. I made a mixture of mini muffins and full size muffins because, why not?! The ingredients I used were... * 1 1/2 cups of plain flour * 1/4 cup of date paste (see below) alternatively you could use 3/4 cup of sugar or an alternative sweetener * 2 teaspoon baking powder * 1/4 cup melted coconut oil, melted (or you could use vegetable oil) * 1/4 cup apple purée / sauce * 1 large egg * 1/3 cup whole milk * 1 teaspoon vanilla extract * 1/2 cup blueberries * 3 tablespoons of desiccated coconut plus extra for sprinkling * 2 dates, stones removed, chopped up To make... * Whisk together the oil, applesauce, egg, milk, date paste (or alternative sweetener) and vanilla * Fold the flour, coconut, chopped dates and blueberries into the wet ingredients * Spoon the mix into a muffin tray (if you’re not using silicone muffin trays then paper cases are recommended) * Top with a sprinkling of desiccated coconut * Bake at 180’C until done (skewer will come out clean or the tops spring back lightly when touched). Timings will depend on the size of your muffins - mini muffins will take approx 20mins, full size muffins will take longer The date paste made the mix slightly darker than usual which made it more difficult to judge when they were cooked. When I thought they were done I chopped one in half - it was still a bit soggy in the middle so I covered them and put them back in the oven for a little longer. To make the date paste I took three large medjool dates, soaked them in boiling water for 15mins and then blitzed them in a mini food processor / blender with a little of the soaking water until smooth.
