Fish fingers

I’ve been wanting to make fish fingers for ages and we had a single small fillet of salmon in the freezer so I thought I’d give it a go. They only need a few basic ingredients and they are so simple and delicious they’re definitely something I’ll be making again soon. Joshua absolutely loved them too. When it comes to fish fingers the overall process of coating and baking the fish is pretty standard - other than that you can mix things up a bit by adding different ingredients to the crumb coating to change the texture, flavour, colour or nutrients. I’ve listed the basic essential ingredients below but have added some suggested extras you may also want to add further down. The basic ingredients are... 🐟 a fillet of firm fish (cod, haddock, pollack, salmon etc) 🌾plain flour 🥚 egg, beaten 🍞 breadcrumbs 🥄plus any optional extras (see ideas below) To make... - cut the fish into small pieces - put the flour, egg and breadcrumb mix into three separate bowls/plates - coat each piece of fish in the flour, then dip into the egg, then coat in the breadcrumb mix - place on a lightly oiled baking tray and spray/drizzle with oil - bake in the oven at 180’C for 10-15mins, turning halfway, until golden and cooked through Enjoy fresh, refrigerate or freeze, reheating in the oven before serving to crisp them up again. Ideas for additions to the breadcrumb mix... - As well as/instead of breadcrumbs use panko breadcrumbs, blitzed up cornflakes, rice crispies or oats, dried polenta, ground almonds, etc - add some extra colour and flavour with ground paprika, pepper, turmeric, garlic, chilli etc - add fresh or dried herbs such as parsley or dill, lemon zest etc - add extra nutrients with ground flax seeds, ground hemp hearts, chia seeds etc The ingredients I used were inspired by a post from @mylittletum which I had saved ages ago (though it turned out I was missing some of the key ingredients so I mixed it up a bit). I used panko breadcrumbs (which I ground down a little in a pestle and mortar to make the granules smaller), paprika, turmeric, garlic powder and pepper. They were delicious and hubby commented how much they looked like ‘real’ fishfingers. #win .
