We bought some plums a while ago and they’ve just been sitting there, (along with some apples I rescued from being binned at work) getting progressively softer and more wrinkly while we decided (very slowly) what to do with them. That was untilI saw a post by @weaningful earlier today with a recipe for a plum and apple clafoutis! A perfect way to use them up! Traditional clafoutis recipes are very sweet and sugary and they often include double cream which I don’t tend to have in the house unless I’ve bought it for a specific reason. This version is sugar free (though you could add some if you want) and uses natural yoghurt or sour cream instead of cream. - 45g butter, melted (plus extra for greasing)
- 3 eggs, beaten
- 60 g greek yoghurt (or sour cream)
- 35 g plain flour
- 35g ground almonds
- 1/4 teaspoon of vanilla extract
- 200 g fruit of choice eg. apples, pears, cherries, apricots, plums, sliced
(I used apples and plums)
To make...
- grease your pan / dish
- mix all the ingredients (apart from the fruit) together
- pour all the batter into your pan and top with slices / pieces of fruit
- bake for 20-25 min at 200 C until it starts to brown
- leave to cool before removing from the pan
Eat fresh, refrigerate or freeze
