Halloumi, courgette & butterbean fritters

Halloumi, courgette and butter bean fritters... They were inspired by @waitrose magazines’ courgette and chickpea fritters but I didn’t have any chickpeas in the house, so I used butter beans instead and they worked out great. I roughly mashed some butter beans, added grated courgette which had been squeezed dry, grated halloumi, an egg, self raising flour, spring onions, lemon zest and fresh mint. Then I pan fried the fritters in a spoonful of oil. Eat fresh, refrigerate or freeze. Enjoy x
