Leftover porridge cups


Joshua is very hit and miss with his porridge - he’ll chow down bowlfuls of the stuff, or he’ll refuse it entirely. Today was the latter... he wouldn’t touch a drop. There’s no way I’d let so much good food go to waste and be binned, and luckily I know a surefire way to revamp porridge so that Joshua will eat it....bake it!! To make the leftover porridge cups all I did was take the leftover porridge, pop it into a muffin tray (I used silicone as it doesn’t stick - I imagine you would need to grease any metal muffin trays really well) and bake it in the oven at 180’C for approximately 15-20 minutes.

I wanted a nice soft texture so I took them out when the top was looking firm and starting to brown but I could tell that it was slightly soft inside. Then I left them to cool and carefully removed them from the muffin tray (running a blunt knife around the edge first to release them). After refusing to even taste it at breakfast Joshua ate 3 for his afternoon snack, and asked for even more! Healthy, yummy, porridge goodness without the waste... and mess free too!!
