These chocolate orange oat bars tick all the boxes... They’re sweet and chocolatey so the kids will love them, yet they’re healthy, nutritious and contain no added sugar so the parents will love them too! Win! Win! . They contain the same main ingredients of banana, oats and nut butter as my banana and oat cookies (recipe in my highlights) but the cooking method of baking the mix in a tray and then slicing it up into bars was inspired by @feedingharry peanut oat bar recipe. In fact, this method is so much simpler than shaping each cookie individually, and I prefer the texture when cooked this way too, so I think I’ve been converted! Thanks @feedingharry . The chocolate and orange flavour was inspired by a recipe @kateveggiedesserts . The sweetness of these oat bars comes naturally from the banana, fruit juice and raisins. When it comes to bananas, the riper they are the sweeter they are - so try to use nice brown ones. When I asked my local green grocers if they had any particularly brown bananas and they gave me these for free because they were too brown to sell and were going to go to waste - so it never hurts to ask!! . The recipe below includes 2 tablespoons of nut butter. I used 1 tbsp of almond butter and 1 tbsp of hazelnut and cacao butter to add to the chocolate flavour. Alternatively you could swap 1 tbsp of nut butter with a chocolate spread such as Nutella, or you could use 2 tbsp of plain nut butter and could optionally add a little extra cocoa powder. . The ingredients are... - 3 ripe bananas - the browner the better! - 230g oats (I used approx 170g porridge oats and 60g jumbo oats, but all porridge oats would work fine) - 2 tablespoons nut butter - 60g raisins - 1tsp cocoa powder - 1 satsuma - zest and juice (approx 35ml of juice) (Only 1 satsuma needed, not the 2 as pictured 🤦🏼♀️) . To make... - soak the raisins in hot water for 5 minutes, then drain - mash the bananas well in a large bowl - add all other ingredients to the bowl and mix to combine - line an ovenproof dish with baking paper - spoon in the mix and smooth flat - bake in the oven at 180°C for 20 minutes - leave to cool in the dish - cut into slices . Eat fresh, store in an air tight box or freeze. . Enjoy x
