We often eat shop-bought fishcakes but I fancied having a go at making my own. These went down an absolute treat and Joshua loved them. When I was serving them up he said the words I’d been longing to hear for over 2 years... ‘mummy is good at cooking’ 😂🥰😃 and then at bedtime that evening he asked to have them for dinner again the next day!! 🙌🙌 . The recipe for these cheesy fishcakes were inspired by recipes I saw in @tescofood magazine and on the @Waitrose website. . I used haddock fillets, but you could use other fish such as cod or salmon You don’t need to be exact with your ingredients or weights - just use what you have. But try not to use too much potato as it will drown out the fish. The fillets I had weighed 280g so I used 350g potatoes (which is approx 25% more potatoes than fish by weight). . Ingredients I used for the fishcakes... - 280g fish fillet (I used haddock) - 350g potatoes, peeled and chopped - 70g frozen peas - 60g cheddar cheese, cut into small cubes - 2 spring onions, chopped - 2tbsp fresh parsley, chopped . Ingredients for the coating... - plain flour - 1 egg, beaten - breadcrumbs . To make... . - Boil the potatoes until cooked through. Drain and leave to cool and release steam. - Cook the fish fillets as per the packet instructions. (I oven baked but you could poach, pan fry or grill). Leave to cool. - Boil the peas until cooked. - Mash the potatoes. - Break up the fish fillets into small pieces, removing any bones and skin (optional to remove skin). - Mix together the potato, fish, peas, cheese, spring onions and parsley. - Shape into fishcakes (wet hands may help) - Chill in the fridge for 20+ minutes - Place the flour, beaten egg and breadcrumbs in separate bowls - Dust the fishcakes in flour, then dip in the egg, then coat in the breadcrumbs - Transfer to a non-stick tray, spray or brush lightly with oil - Bake for 20-25 minutes until golden brown (time will depend on the size of the fishcakes) . Eat fresh, refrigerate or freeze. If freezing, you can freeze before or after baking. Defrost fully and reheat until hot all the way through before serving. . Enjoy x .
