Parsnip & pepper muffins

Savoury muffins are great as a healthy snack or part of a light lunch. They’re also the perfect opportunity to pack in some extra vegetables - particularly some of the veg your little one might be less likely to eat normally. . I really like parsnips but, if I’m honest, I usually only buy and cook them at Christmas. I suspect that’s the only time we’ve ever offered them to Joshua too, and it’s likely that he refused to eat them because they were new to him. He’s also not normally a fan of eating peppers. . I haven’t made any savoury muffins for ages, so when I saw a recipe in Tesco magazine for parsnip and red pepper muffins I thought it would be the perfect opportunity to make some. . I varied the recipe slightly and used slightly different veg. I also found that the muffins took longer than expected to cook through - possibly due to the moisture content from the vegetables. I checked one muffin after 25 minutes but found it to be still quite wet inside so I covered them in foil and then baked for a further 5-10 minutes. . I would suggest cooking the muffins in a silicone muffin tray or silicone cupcake cases. Paper always sticks. . The ingredients are... - 275g plain flour - 1tbsp baking powder - 2 eggs - 225ml milk - 1 pepper, (I used half a red pepper and half a yellow pepper) finely diced - 1 small parsnip, grated - 3 spring onions, chopped - Handful spinach leaves, chopped - 2 tbsp dried mixed herbs - 125g cheddar cheese, grated . To make... - place the flour and baking powder in a large bowl and mix to combine - mix the eggs and milk together and add to the bowl of flour - add the prepared veg, cheese and herbs to the bowl. Mix to combine. - spoon the mix into a silicone muffin tray or cases - bake at 180°C for 25mins or until cooked through. (If they’re not cooked through at this stage you may need to cover and cook for longer) - remove from the muffin tray and leave to cool . Eat fresh, refrigerate or freeze. . 👶 Suitable from 6 months. Cut into finger shapes for little ones. . If eating from the fridge or once defrosted I suggested reheating them slightly to freshen them up again. .
