Vegetable & butterbean ‘sausage’ rolls


Butter beans (also known as lima beans) are a great source of fibre, protein, iron and B vitamins so when I saw these vegetable and butterbean rolls in @tescofood magazine I had to give them a go. . I changed the recipe a bit by increasing the vegetable content and using the vegetables I had lying around in the fridge and adding a few extra flavours. . I frequently make up my recipes as I go along and add extra ingredients half way through, which is why the sun-dried tomatoes and cottage cheese aren’t in the ingredients photo 😂. They’re not essential, so feel free to omit or add some different flavours instead. I’m sure lots of other veg would work too - spinach, peppers, parsnip, spring onions etc so feel free just use what veg you have. And if you don’t have any sun dried tomatoes then a big spoonful of pesto would work well. . The ingredients I used were... - 1 pack puff pastry - 400g tin of butter beans (lima beans), drained - 200g vegetables, finely chopped or roughly grated (I used carrot and courgette, grated) - 100g cheddar cheese, grated - 1 egg, beaten (optional) - large handful of fresh parsley (or 2 tbsp dried) - 2 heaped teaspoons of cottage cheese (optional) - 2 tablespoons chopped sundried tomatoes (or pesto) . To make... - Place beans in a bowl and mash well with a fork or potato masher until all beans are roughly crushed. - Add remaining ingredients (apart from the pastry) and mix well. - Lay pastry out and roll it to 2-3mm thick - Cut in to wide strips, place a line of the filling 2cm from the edge and roll up with the join underneath. - Cut into similar size rolls and place on a lined baking tray. - Brush with milk or beaten egg to glaze and sprinkle with sesame seeds (optional) - Bake at 180°C for 20mins until golden. . Eat fresh, refrigerate or freeze ❄️. . 👶Suitable from 6 months. These hold their shape well but are soft to chew so should be perfect for little hands and gummy mouths. For younger children make sure all beans are well mashed and maybe replace some of the cheddar for cottage cheese or cream cheese to limit the salt content. . 🥚🧀For those with allergies - the egg can be omitted and dairy-free cheese might work ok. .
