Crunchy, nutty, fruity granola. Perfect served with milk, sprinkled on yoghurt, or on its own as a snack. It’s so simple to make and you can adapt the ingredients and flavours to suit you. . 👶The batch I made was going to adults but if you’re making this for children... 🦷be sure your child is able to cope with such crunchy foods before serving - may not suitable for those under 10months. 🥄 don’t create big clumps of granola - mix well half way through and at the end 🥜 don’t include whole nuts or big seeds - use flaked almonds or coconut flakes instead (add these halfway through the bake instead of the start to prevent burning) Or omit entirely. 🍯 don’t use honey as a sweetener for those aged under one. . 📝 Notes: ⚖️ I made a big batch as I was giving this away as Christmas presents, so reduce the quantities accordingly if you don’t need as much. 🥄For bigger clumps press the mix down before baking, only lightly mix halfway through, and press down again at the end before cooling. 🥚 The egg white helps to make the granola extra crispy and crunchy and is optional. . Ingredients.. - 4 cups of porridge oats - 2 cups of jumbo oats - 2 cups of nuts (I used pecan and pistachios) - 1/2 cup of seeds (I used pumpkin seeds) - 1 cup dried fruit (I used cranberries) - 100g oil (I used 50g coconut oil and 50g vegetable oil) - 150g sweetener (I used a mixture of maple syrup, golden syrup and soft brown sugar) - 1 tsp salt - 1 egg white (optional) - spice and flavours of your choice (I used 1/2 tsp ground ginger, 1/2 tsp mixed spice, 1/4 tsp vanilla essence, 1/4 nutmeg, finely grated, zest of 1 orange, plus a squeeze of the juice) . To make... - gently heat the oil, sweetener, salt, spices and flavours in a pan and stir until any sugar has dissolved. Leave to cool slightly. - whisk the egg white until frothy - place the oats, nuts and seeds into a large bowl - add the oil and spice mix to the oats and mix to combine - add the egg white and mix to combine - spread the oat mix on lined baking trays - bake at 150°C for 30 mins, stirring half way through - remove from the oven, leave to cool, then add the dried fruit . Store in an airtight container for up to 4 weeks. .
