Cheesy Courgette (zucchini) fritters


Fritters are an absolute baby led weaning favourite here at @baby_led_eating . They’re perfect for little ones as they’re firm enough to hold but soft for them to chew and mush up in their gummy mouths. They’re also really quick and simple to make and are a perfect way to use up any odds and ends of veg you have lying around. Plus they’re a great way to serve up food which your little one might usually refuse - Joshua will rarely eat courgette or avocado when served on their own, but he wolfed them down in these fritters. . These fritters in particular are perfect for the early weeks and months of solids as they have such a soft, smooth texture - the courgette (zucchini) cooks down really soft and the avocado gives them a lovely creaminess. . The ingredients are... 🥒courgette (zucchini) 🥚an egg, beaten 🌾 flour (self raising or plain) 🥑 avocado, chopped into cubes 🧀 cheddar cheese, grated 🧀 cottage cheese (or cream cheese) 🍃 fresh or dried herbs (dill is nice!) . To make... 🥒 grate the courgette and squeeze out any excess liquid 🥄 mix all ingredients together to make a thick batter consistency ♨️ drop spoonfuls of the mix into a lightly oiled frying pan on a medium heat ♨️ carefully turn over once the base has firmed up and is starting to brown to cook the other side . 🍽 Serve fresh and warm from the pan, refrigerate or freeze. ❄️ If freezing, freeze after cooking . 👶 Suitable from 6 months. Serve cut into fingers for little ones. . 📌 If you are planning to slice them up to serve them then let them cool slightly first - this lets them firm up a bit first and helps them hold their shape . 🙋‍♀️ Delicious for adults too!!
