@katie_louise_warrington and I have been obsessing over crumpets recently so I took inspiration from @whatiateforbreakfast ‘s ‘Frumpet’ (French toast crumpet) recipe and made Joshua some eggy crumpets with cheese and tomatoes for breakfast. He absolutely loved them, especially when I gave him a little blob of ketchup for dipping. Ingredients... - pikelets or crumpets - egg, beaten - cheese, finely grated - tomato, finely chopped - unsalted butter for greasing the pan To make... - mix the egg, cheese and tomato in a bowl - soak the crumpets in the mix for a minute - pan fry one side in a little butter - top each crumpet with a bit more of the cheesy, eggy, tomato mix - turn over and fry until cooked through Enjoy fresh x
