Blueberry tarts


We are in the middle of blueberry season and we had a massive punnet in the fridge. We also had some old puff pastry lying around, so I made some blueberry tarts inspired by a recipe in tesco magazine Luckily they came out great and tasted delicious - Joshua had two for dessert and was crying out for more! Ingredients... - Puff pastry - Blueberries - Greek yoghurt - Cream cheese - Ground almonds - Vanilla paste or essence To make... - Roll out the pastry and cut it into squares - Score the pastry about 1cm from the edge (but don’t cut fully through the pastry) - Mix together some cream cheese, yoghurt, ground almonds and vanilla until you have a thick wet paste - Spread the paste over the middle of the pastry squares - Top with blueberries - Bake at 180’C for approx 20mins until the pastry is crisp and golden and the blueberries are softened. Enjoy fresh, refrigerate or freeze (warming through in the oven before serving to freshen up the pastry.) Enjoy x
