Cheesy courgette fritters


These cheesy courgette (zucchini) fritters are so quick and simple to make and are a perfect size and texture for little hands and little mouths. You can mix up the ingredients and flavourings by adding different vegetables, herbs or spices. They’re also a great way to serve up food which your little one might usually refuse - Joshua will rarely eat courgette or avocado when served on their own, but he wolfed them down in these fritters. The ingredients are... - courgette, grated and squeezed dry - cheese, grated - cottage cheese - an egg, beaten - plain flour - avocado, chopped To make... simply mix together all the ingredients, adding flour until you have a thick batter consistency. Heat a lightly oiled non-stick pan and drop in spoonfuls of the mix, flattening slightly to make a round flat fritter shape (similar to a drop scone or pikelet size). When the base is firm and starting to turn brown, carefully turn them over to cook the other side. Eat fresh, refrigerate or freeze. Enjoy x
