Crispy sautéed potatoes

Joshua has always been a bit hit and miss about potatoes but when I saw today’s Cajun spiced potato recipe from @whatiateforbreakfast I thought I’d give them a go. They took less than 10 minutes to make and went down an absolute storm - Joshua ate two portions with his dinner and then came back afterwards and asked for even more. These are a great option for little ones as they are bitesized chunks and are nice and soft on the inside. They’re also a great option for adults as they’re ruddy delicious!! I flavoured these ones with paprika but you could use chilli, Cajun spices, dried herbs, fresh rosemary or even sprinkle with cheese afterwards. To make... 🥔 chop potatoes into chunks (no need to peel) 🥔 blast in the microwave or par boil for 3-4 minutes until you can pierce the potato chunks with a knife quite easily but they still hold their shape well 🥔 add a tablespoon or two of oil to a hot pan, add the potato, sprinkle on your flavouring of choice (I used paprika) 🥔 pan fry for 4-5 minutes, stirring every minute or so, until crisp and golden. Enjoy x
